Chef Edgar “Dook” Chase IV with Chapter IV Restaurant and Bar in New Orleans starts a gumbo during his “Mastering Creole Cooking” class Friday morning at the Sowela Culinary, Gaming, and Hospitality Center. The Louisiana-inspired master class was part of the Louisiana Food & Wine Festival which continues through Sunday. Chase is the grandson of the late Chef Leah Chase, with whom he trained. He was also classically trained at Le Cordon Bleu Paris.
